Washed coffees require high amounts of water which is not always available, even though a lot of our farms are located nearby rivers or spring water. Honeys or naturals need little or no water. This is a lot more environmentally friendly, and one of the reasons we are working with more and more of these processing methods at The Barn. When processed well, honeys and naturals can be very clean in taste which is what we need for high scoring coffees.
Water usage can also be reduced by using Eco Pulpers. In sustainable farming our coffee growers filter their water before it goes back into nature.
