Cauca is one of our favourite coffee growing regions in Colombia. The Popayán plateau offers ideal coffee growing conditions: high altitudes, close proximity to the equator, and surrounding mountains to protect from the cool winds of the Pacific Ocean. This year, our microlot from La Maria is well structured with a sweet and floral cup profile. Juicy notes of blackcurrant, dragon fruit and violet are brought together with a sparkling mouthfeel and a clean, lasting finish.
La Maria is a 2.5 hectare farm owned by Silvio Ilser Ledezma. He only grows Castillo - a varietal predominantly seen in Colombia. Over the last few years, recognition of this coffee plant has really taken off in the specialty community. It has the ability to thrive at high altitudes and brings out complex flavour profiles. Silvio soaks his beans up to four times to produce this immaculately clean washed cup.
