We are using the word "decadent" for the first time in our flavour descriptors. This lactic - anaerobic coffee is super complex with rich tropical notes of Papaya, Blueberry Compote, Coconut and Banoffee. This coffee is rich with sweet dessert like notes.
La Palma & El Tucán have built a strong reputation for high-end processing. Located in the Western Slopes of the East Andes, they have started a program called "Neighbors & Crops" to elevate cup qualities of neighboring small holders within a 10km radius. The coffee is processed at La Palmas innovative wet mill using techniques that conserve water and recycle waste back into organic compost.
Ana Lucia Martinez joined the program in 2014 and she delivered what we think is the best Nanolot we have cupped from Colombia this year. The processing gives it an amazing mouthfeel and acid structure.
This lot was processed using Lactic fermentation, which is classified as ‘Anaerobic’ as oxygen has minimal interaction with the coffee cherry. Once the cherries arrive at the mill, they are hand sorted and placed in sealed tanks. With no oxygen involved, bacteria feed on carbohydrates present in the mucilage favoring a higher concentration of lactic acid, creating a unique profile of the resulting cup.
